Just Below Simmer

For those of you who know me well, what I am about to say will not be a revelation. For others, it might be.

I am not a cook.

Never have been. Doubt I ever will be. It is not something I aspire to. Fortunately, God blessed me with an incredible husband, who loves to cook.

Don’t get me wrong. I can cook. I do know how to operate a can opener and microwave, after all. 😉 I just don’t enjoy cooking. Among Pilot’s cookbooks is “The Joy of Cooking”. Mine? “Fix-it and Forget-it”. Seriously.

The other day, I decided to boil a couple eggs. Simple, right? Put some eggs in a pan of water. Boil rapidly ’til you figure they are done. Remove from heat. For me, that could be up to half an hour, if I forget I’m boiling eggs. Yeah, it happens.

I told you. I am not a cook.

My Better Homes and Gardens cookbook says, “When water boils, reduce heat at once to keep water just below simmering. Cover and cook for 15-20 minutes.”

Bring to a boil, reduce heat and keep just below simmer until done.

At this specific point in time, I feel as if I have been put in a rapidly boiling pot of water – and left there. I’m waiting for the heat to be turned to just below simmer.

If I look back at my cookbook, it also says to “cover and cook”. Although I may feel as if I am done…Ding…Time’s up…Get me out of this boiling water…God hasn’t forgotten me. He has covered me with his love. His mercy. His grace. God has his hand on the controls. While I continue to cook, God knows when to turn down the heat.
